Crunchy Cereal Prawns

Ingredients:

  • 250g of Veg. Hokkaido Big Prawns
  • 120g of Nestum Cereal (Original Flavour)
  • 1/2 tsp Salt
  • 1 1/2 tsp Sugar
  • 1 1/2 tbsp Milk Powder
  • 1 Egg, beaten
  • 1 1/2 tbsp Plain Flour
  • Corn Oil
  • 30g Unsalted Butter
  • 20g Curry Leaves
  • 2 Bird’s Eye Chillies, thinly sliced

Instruction:

  1. Thoroughly stir together cereal, salt, sugar, and milk powder. Set aside.
  2. Coat the Veg. Hokkaido Big Prawns with beaten egg, then sprinkle with flour and mix until coated. Deep-fry in hot oil (just smoking) over maximum heat possible until cooked. Drain excess oil.
  3. Heat butter in a pan until bubbling and lightly browned. Add curry leaves and sliced chillies. Fry over medium heat until fragrant.
  4. Reduce heat to low. Add the cereal mixture. Stir until lightly golden. The curry leaves should crisp up as excess moisture is absorbed by the cereal.
  5. Add the cooked prawns and toss until well mixed, turning off the heat as the cereal turns fully golden brown. Taste and adjust seasoning if necessary.
  6. Plate and serve immediately.
