Curry Mutton

Ingredients:
250g of Veg. Mutton Chunks
2 pkts of OKK Veg. Meat Curry Paste
50g of Curry Leaves
2 stalks of Lemongrass
300g of Potatoes
200g of Tomatoes
50g of Coconut Milk
600ml of Water
Instruction:
Peel the tomatoes and cut them into small pieces.
Heat a pot of oil to 180°C and deep-fry the potatoes for 2 minutes. Remove and set aside.
In the same pot, add some oil. Stir-fry the lemongrass until fragrant, then add the curry paste and tomatoes. Continue stir-frying until fragrant.
Add the Veg. Mutton Chunks, curry leaves, and water. Bring to a boil.
Once boiled, add the coconut milk to the curry mixture and stir until well combined.
Ready to serve.
